Join The El Dorado Meat Collective in a hands on basic whole pig butchery class by women for women. This class will be taught by Butcher Heather Marold Tomason. Women are increasingly showing an interest in meat production, whether ranchers, butchers, chefs, or simply home cooks. This class is open to everyone, but will focus on the interests of women who want to work with meat. Learn how to split sides of pork into primals and then break them down into familiar cuts like ribs, tenderloins, roasts, chops, and more. The Class instructor will demonstrate each cut on one side and guide students to perform the butchering on two other sides with their own hands. The class will also include cooking tips and tricks, discuss basic curing techniques for bacon lovers. All students will go home with their share of meat (about 25 pounds). No experience required. All tools provided.
