Join Slow Food Gold Country at Manzanita Kitchen & Events in Diamond Springs, CA, for a Meat Preservation workshop led by Chef Kara Taylor, Owner of Smokey Ridge Charcuterie (www.smokeyridgecharcuterie.com).
Many home cooks think that confits, pâtés, and rilletes are demanding recipes best left to the professional chefs. Not so! They are simple to do in your own kitchen, and the results are so good you might never go “store bought” again. In this meat preservation class, Kara will teach us methods for preserving meat using fat. You will learn to make a basic confit, one of the oldest methods for preserving meat and a technique that comes to us from southwest France. The careful process renders the meat incredibly flavorful, tender and convenient to use. Kara will also be leading us in hands-on production of rillettes with participants taking home their own rillettes to share with family and friends.
The class will consist of:
- Introduction to confit and rillettes
- Food safety
- Kitchen Equipment
- Demonstration of the process for making confit
- Appetizer served with introduction to rillettes
- Hands-on rillettes-making
- Light meal served at end of class
