Almost year round, the El Dorado County foothills are literally bursting with flavor.  Each year, as new organic farms establish themselves here, we work hard to build lasting relationships with them and in turn, bring all the flavor and freshness of the Foothills to you!

For the majority of the year, we source our ingredients primarily from farms and producers within a 30 mile radius.  During the chilly Winter months, we expand our sourcing from a 50 to a 150 mile radius.  As our menus boast flavors from around the world, there are often specialty ingredients we can’t source locally, for these, we make every effort to purchase from sustainable producers and conscious purveyors.  

At our table, with this blend of carefully sourced ingredients and conscious preparation, a delicious variety of foods and flavors come to fruition.  We are committed to producing foods that not only excite your senses and nourish your body but also take into consideration the health of future generations through the conservation our planet’s precious resources.  Please find a complete list of ingredient sourcing below.

Seafood Sourcing

These days, finding fresh, sustainably-sourced, uncontaminated, and affordable seafood is increasingly more challenging.  For this reason, seafood items are some of the most expensive on our menus.  The following are guidelines we use when sourcing seafood to insure its cleanliness, sustainability, and quality.  

  1. We only use wild-caught Salmon & Trout OR Salmon & Trout from the following organic/sustainable/non-GMO certified farms: Skuna Bay Salmon, Mt. Lassen Trout, Passmore Ranch Sustainable Fishery.
  2. We use the Monterey Bay Aquarium’s Seafood Watch program as a guide for making the most sustainable seafood choices for our oceans.  We only purchase options from their green “Best Choices” or yellow “Good Alternatives” categories.
  3. We do not purchase cheap farmed Tilapia, Mahi Mahi, or Shellfish from Asia.  As such, Prawns, Shrimp, Scallops, Crab, Tilapia, and Mahi Mahi can be some of the most expensive items to offer your guests.
